The menu at The Dining Room is a representation of the ever-changing seasons and the abundance of exceptional Australian ingredients. James Viles, Culinary Director, and his team have masterfully crafted a selection of dishes that pay homage to Australia’s diverse regions and flavours. “We have moved well beyond being sustainable; we actively interact with the sourcing of our ingredients. Whether it be visiting the property/farm in action or sampling the produce onsite, this is about local produce coupled with the skill and creativity of our culinary team.” Says James Viles.

As I started looking at the menu, I couldn’t help but admire the thoughtfulness that went into each dish. Everything from the Rangers Valley Ribeye to the Maremma Duck was beautifully made with a balanced character that left me craving for more.

One of my dining experience highlights was the school prawn katsu + bonito sauce, the young pork belly braised + sour & sweet sauce and the bone in sirloin, O’Connor pasture fed. Also, the beautiful award-winning Tim Malfroy’s Gold Wild Honey, sourced from bee-friendly Warré hives in Sydney’s Blue Mountains, was such an experience. This golden elixir added a touch of sweetness to the desserts. It was a delightful treat that showcased the incredible flavours that can be derived from local produce.

I also couldn’t resist trying the whole chilli mud crab from far north Queensland, served with a house-made native XO sauce. The combination of flavours was simply sensational, and I found myself savouring each bite with sheer delight.

If you’re visiting during lunchtime, I highly recommend exploring their range of small and large plates, which are ideal for sharing or enjoying yourself. For those on a tight schedule, The Dining Room also offers set menu options designed to be enjoyed within the hour.

If I were not currently pregnant, I would indulge myself in their Sydney Rock Oysters paired with a glass of Chablis for a true moment of bliss — But that will be the next time because I’ll definitely be back.
